Oatcake Mix Recipes & Variations

AKAMAI FOODS DRY OATCAKE MIX VARIATION

SIMPLE ADDITIONS: Add ½ C pumpkin or 2 medium bananas (sliced or mashed) to 1 bag oatcake mix. You will probably have to increase cooking time 10-15 minutes. Add ½ C trail mix or nuts for a heartier oatcake. To make 2 oz oatcakes, increase the oven temperature to 375˚F and reduce cooking time to approx. 15-20 minutes.

OAT COOKIES (yields approx. 2 dozen cookies) 1 package oatcake mix ¼ C butter or margarine, softened ¼ C sugar 2 large eggs, slightly beaten

1. pre-heat oven to 350°F, grease cookie sheet. 2. whisk butter and sugar, add vanilla and egg. 3. add oatcake mix, stir till just incorporated. 4. drop by heaping tablespoons onto cookie sheet. 5. flatten each cookie slightly, bake 20 min, or until golden brown.

OAT PANCAKES (yields approx. 10 pancakes) 1 package oatcake mix 2 each eggs, slightly beaten 2 tsp oil 1 ½ C water or milk pinch salt

1. Pre-heat non-stick skillet on medium heat. 2. Combine all ingredients, do not overmix. 3. Pour approx. ¼ C batter onto hot pan for each pancake. 4. When batter bubbles and edges begin to set, flip over. 5. Cook till browned on second side, remove from heat.
