Wake up to a healthy and tasty freshly baked low fat oatcake in the time it takes to make pancakes from a mix. Rich in whole food ingredients such as fiber rich, cholesterol-busting oats, flaxseed and fruit, packaged oatcake mixes require only water and 2 teaspoons of oil to make 6-8, 4 oz oatcakes. You can add banana, pumpkin, nuts or chocolate chips to the mixes, or use the mixes as a base for easy and healthy pancakes:

PANCAKES: 1 bag mix, 1 T oil, 3 eggs, 2 1/2 - 3 C water.

My favorite breakfast is to use the date-apple mix. I make 1/4 C size pancakes,then make a sandwich with peanut butter and fresh sliced banana. You can make about 10 of these sandwiches from 1 mix. The pancakes freeze well. Just pull it out of the freezer, make your sandwich and you are ready to go to work or school!

Because oats are perishable, we recommend a shelf life of 3-6 months (depending on storage temperature).
